Carrot and Ginger Soup

 2 tablespoons olive oil
1 teaspoon cumin powder
1 onion
1 knob of ginger peeled and sliced
2 pounds of carrots peeled and roughly chopped
6 cups vegan broth
Salt and pepper to taste

  1. Saute onion in olive oil till soft.
  2. Add in cumin and ginger.  Saute till it becomes fragrant.
  3. Add carrots and broth.  Cook till carrots until tender.
  4. Puree soup in blender.  Adjust seasoning with cumin, salt, and pepper.
