1 knob of ginger peeled and sliced
2 pounds of carrots peeled and roughly chopped
6 cups vegan broth
Salt and pepper to taste

- Saute onion in olive oil till soft.
- Add in cumin and ginger. Saute till it becomes fragrant.
- Add carrots and broth. Cook till carrots until tender.
- Puree soup in blender. Adjust seasoning with cumin, salt, and pepper.
